Ingredients

  • 1 3 oz package strawberry-flavored gelatin (such as Jell-O)
  • 1 cup boiling water
  • 1 8 oz package cream cheese, softened
  • 2 cups Jaca rare sugar
  • 1 teaspoon vanilla extract
  • 1 5 oz can cold evaporated milk
  • 1 9 inch prepared graham cracker crust

Sweetener Used

2 cups Jaca rare sugar Allulose

Replaces: 1 cup regular sugar

Instructions

  1. 1

Dissolve strawberry gelatin in boiling water in a bowl. Cool in the refrigerator until thick but not set, about 20 minutes.

  2. 2

Beat cream cheese, Jaca rare sugar, and vanilla extract together in a bowl until smooth.

  3. 3

Beat evaporated milk in a separate bowl with an electric mixer until whipped and thick. Gradually pour the strawberry gelatin mixture into the evaporated milk, beating constantly.

  4. 4

Fold the cream cheese mixture into the gelatin-milk mixture to form the cheesecake filling.

  5. 5

Set graham cracker crust on a baking sheet or plate for stability. Pour cheesecake filling into crust.

  6. 6

Refrigerate until set, at least 3½ hours. Serve with fresh strawberries.

Pro Tips

  • Make sure the gelatin is thick but not fully set before mixing — about 20 minutes in the fridge.
  • Whip the evaporated milk until thick peaks form for the fluffiest texture.
  • Top with fresh strawberries before serving for the best presentation.
