Homemade strawberry jam sweetened with Jaca sugar — rich, spreadable, and guilt-free.

Ingredients
- 2 pounds fresh, ripe strawberries
- 5 ½ cups Jaca sugar
- ¼ cup lemon juice

Replaces: 5 ½ cups regular sugar
Instructions

Hull (remove stems and leaves) and chop or mash the strawberries.

Cook strawberries with the Jaca sugar and the lemon juice on low heat until the Jaca sugar is dissolved.

Set heat to high and bring to a full boil.

Continue boiling at medium heat for about 30 min. until the mixture reaches 220 degrees F, stirring often (use candy thermometer).

Let it rest for 15 min., place a spoonful of jam on a cool plate, and check its consistency after 2 min.

Possibly extend cooking time to achieve a thicker texture.

Pour into hot, sterile jars, seal, and boil jars in hot water following manufacturer's instructions.
