Ingredients

  • ½ cup butter, softened
  • 2 cups Jaca sugar (replaces 1 cup sugar at 2x ratio)
  • 1 large egg, room temperature
  • ½ teaspoon vanilla extract

    In a large bowl, cream the softened butter and 2 cups Jaca sugar together until light and fluffy, about 5–7 minutes. Beat in the egg and vanilla extract until well combined.

    In a separate bowl, whisk together the flour, salt, baking soda, and cream of tartar. Gradually add the dry mixture to the creamed mixture and mix until just combined.

    In a small shallow bowl, combine 4 Tbsp Jaca sugar and 2 tsp ground cinnamon for the coating.

    Shape the dough into 1-inch balls. Roll each ball in the Jaca cinnamon-sugar mixture until evenly coated.

    Place the coated dough balls 2 inches apart on ungreased baking sheets.

    Bake for 10–12 minutes until the edges are light golden brown. The centers may look slightly underdone — that's perfect; they'll firm up as they cool.
