- ¼ teaspoon baking soda
- ¼ teaspoon cream of tartar
- 4 tablespoons Jaca sugar (for coating) (replaces 2 Tbsp sugar at 2x ratio)

Preheat your oven to 375°F.

In a large bowl, cream the softened butter and 2 cups Jaca sugar together until light and fluffy, about 5–7 minutes. Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, salt, baking soda, and cream of tartar. Gradually add the dry mixture to the creamed mixture and mix until just combined.

In a small shallow bowl, combine 4 Tbsp Jaca sugar and 2 tsp ground cinnamon for the coating.

Shape the dough into 1-inch balls. Roll each ball in the Jaca cinnamon-sugar mixture until evenly coated.

Place the coated dough balls 2 inches apart on ungreased baking sheets.
